Vincent was born on Jan 5, 1927 in the village of Pak Shan, Toishan, China. His early years were spent living in the family ancestral village and in Hong Kong. He came to Canada in 1950 to escape the Communist regime, and began working in restaurants in Regina and then Winnipeg. In 1959 he travelled back to Hong Kong where he met and married his beautiful wife Sandra, eventually returning to Winnipeg in 1960 where he worked at the Beachcomber Polynesian Restaurant. In 1962, he partnered with his brother Joe to take over the Star Cafe in Kamsack which they owned and operated for 18 years. After the cafe closed, Vincent continued working for several years at Madge Lake first as a chalet cook, then later on as a painter and handyman, finally retiring in 1992.
In his spare time, Vincent enjoyed hunting and fishing with his friends, along with gardening, listening to classical music, playing the violin and woodworking. He was always curious and liked to learn about the world by reading the novels of Pearl S. Buck and stacks of National Geographic and Readers Digest magazines.
Predeceased by his father, Moon, his mother, Ying Fong, and his sister, Sylvia. Vincent will be dearly missed and is survived by wife Sandra of 60 years, children Violet, Raymond (Christine), Lillian (Marc), Ronald (Carol), and grandchildren Alexandre, Rachel, Ryan, Naima, Malaika, Sarah and Melissa, and brothers Joe and Jim.
